Coconut Creamsicle Chia Pudding

Hello my lovelies! I’ve got a tummy and taste-bud approved recipe to share with you 🙂 Chia seed pudding is blowing up all over the place and for good reason. These tiny little pearls of deliciousness are an amazing source of fibre, omega-3 fatty acids and a shockingly high amount of protein. I’ve created this simple and delicious recipe to help get you moving in more ways than one!

Fibre helps regulate digestion and keep things running smoothly. But these little suckers sop up to 9X’s their weight in water so drink up and keep hydrated to avoid the opposite effects.

 Since Chia is such a wonderful source of protein and fibre, it helps to balance blood sugars keeping you fuller longer and helps you avoid turning into the mid-day cookie monster.

Omega-3 fatty acids are wonderful for brain health and powerful inflammation fighters!

I love whipping up a batch of this decadent breakfast pudding before bed so it’s perfectly ready and waiting for me in the fridge in the morning. Simple, healthy, hearty and delicious. Get it in ya and remember to bite with love.

Coconut Creamsicle Chia Pudding

Ingredients
  1. ¼ cup Coconut milk (canned, BPA Free)
  2. ¼ cup fresh squeezed orange juice
  3. ½ cup Water
  4. 3 Tbsp Chia seeds
  5. 1 +1/4 tsp grated orange peel (keep ¼ tsp for topping)
  6. 1 Tbsp Maple Syrup
  7. ¼ tsp pure vanilla
  8. 1 orange peeled & chopped
  9. 1 banana, peeled and sliced
  10. 2 Tbsp unsulfured, shredded coconut
  11. 2 Tbsp Hemp seeds
Instructions
  1. Mix together coconut milk, orange juice, water, 1tsp of grated orange peel, maple syrup and vanilla in bowl. Add chia seeds and stir until well combined. Put in the fridge overnight or for at least 2-3 hours.
  2. *TIP- I like to stir mine after the first 15 mins in the fridge to prevent clumping*
  3. After it has set, top with chopped orange, shredded coconut, sliced banana, hemp seeds and leftover ¼ tsp grated orange peel. To make it extra decadent, I like to drizzle 1 Tbsp of coconut milk for a rich and creamy texture treat.
Notes
  1. *TIP- I like to stir mine after the first 15 mins in the fridge to prevent clumping*

This Saskatoon berry chia pudding with @manitobaharvest Hemp Yeah blueberry granola and a @enjoyyoso yogurt swirl (for the gram) was top notch! And since hemp hearts pack the ultimate trifecta of fats, fibre and protein, this girl was one happy kitten.

If not, this BLT’ish breakfast salad might just change that. I’m a big fan of getting a whole lotta colour in at every meal and I often see that colourful breakfasts can be a challenge for many peeps.

In a world of beige breakfast foods, I challenge you to get your colour on! Personally, I do better with savoury breakfasts that I can whip up in minutes, which is why this breakfast salad has a recurring role in my life. Check it👇🏼. #eggsonstuff .
BLT Breakfast Salad.
🍴big old bowl of mixed greens
🍴a few slices of tomatoes (I used oven roasted ones I had kicking around)
🍴2 slices prosciutto or speck, chopped
🍴1-2 soft-boiled eggs
🍴a little crumble of goat cheese
🍴drizzle with olive oil & balsamic and give that baby a crack of pepper!
